Situated between the foothills of the Andes and the Amazon, in the extreme north of the country, the province of San Ignacio is bordered by the Rio Marañon valley and its steep canyons.
Despite its high altitude, between 1,000 and 1,250 meters, its exceptional microclimate and isolation have enabled us to preserve a cocoa variety long considered extinct: a genetically perfectly pure Nacional.
Since 2010, this cocoa has been the focus of an exceptional preservation program, thanks to the support of 400 farmer-owners in the region, united around a model post-harvest processing center.
After several years of experimentation, a strict fermentation and drying protocol was developed, enabling the extraordinarily delicate aromas of this unique cocoa to be perfectly expressed.
