Matepono 90
(Amelonado & Trinitario from the Matepono River, Solomon Islands)
90% extra-fine dark chocolate
Located to the east of Papua New Guinea, the Kingdom of the Solomon Islands is made up of a thousand islands and islets, representing a landmass barely larger than Switzerland.
In recent years, small family cocoa farms have gradually replaced the large oil palm plantations. Although Solomon Islands cocoa is still little-known, it has established itself as a rare and subtle varietal complex.
David Junior Kebu's plantation cocoa farm is located in the northeast of Guadalcanal Island, near the town of Honiara. Nestled on the banks of the Matepono River, this family-run operation stands out for the quality of its fermentation, drying and bean selection processes. This work earned it a gold medal at the 2015 International Cocoa Awards.
