Such is the case with this rare variety called Catongo, native to the Amazon, and characterized by small white beans similar to those of a pure white Criollo.
At the head of a plantation located between Ilhéus and Uruçuca, in the state of Bahia, João Tavares has made it his mission to rehabilitate the finest Brazilian cocoa varieties.
Cultivated according to the "cabruca" agroforestry system, its cocoa benefits from a post-harvest treatment that is unique in the world, thanks to cylindrical crates that guarantee homogeneous fermentation temperatures.
