Introduced to Madagascar in the early 20th century, cocoa has found some of its finest terroirs here.
A hybrid of Criollo and Forastero, Trinitario is often considered the perfect marriage between the subtlety of the former and the strength of the latter.
The Bejofo farm, from which the beans for this chocolate come, is located in the Sambirano valley, near Ambanja, in the north-west of the country. Since 1920, it has been producing the country's most aromatic cocoa beans.
This family-run business carefully nurtures its heritage of old plants, respecting the rules of organic farming.
