L'Esterre, Granada
extra-fine 80% dark chocolate
Located 150km north of the coast of Venezuela, the island of Grenada is nicknamed the Spice Island for its plantations of cinnamon, cloves, nutmeg and turmeric.
Since 1714, a fruity, floral cocoa has also been grown here, benefiting from the dense, generous volcanic soil.
Domaine L'Esterre has been owned by the Ramdhanny family for over 70 years. This single-holding plantation is located in the north-east of the island, at the foot of rainforest-covered hills.
The family grows cocoa and nutmeg in strict compliance with the rules of organic farming and agroforestry, maintaining the richness and fertility of the soil.
The beans are harvested during the dry season, between November and April, then fermented on the estate for 7 to 8 days before being sun-dried for 6 to 7 days.
